It’s simply full of fruity notes, with hints of citrus and lemon, bringing a crisp acidity to the coffee. There’s also tastes of wine, deep spices with a floral aroma. 

Ethiopia – the birthplace of coffee

The Sidamo certainly lives up to Ethiopia’s reputation as the birthplace of coffee and the 7th largest producer in the world, as well as Africa’s top coffee producer. It’s no small wonder then that you get such a sophisticated cup of coffee.

Produced by hand and managed by a cooperative

Here, the coffee is all prepared by hand, what you get from a small greyish-green bean is pure heaven. It’s made by a cooperative from Kelenso Mokansia up in the district of Bule Hora. There are just over 1500 members of this cooperative with a majority of men to women. They produce over 2,000 tons of coffee every year so they’ve had plenty of time to hone their coffee-making skills. 

Detailed processes that produce a delicious coffee

This is a washed process with the cherries pulped right away and the seeds fermented in water for several hours to remove any mucilage. This is a process that requires knowledge, skill, precision and tremendous attention to detail. The coffee will then be sent through long troughs where it’s thoroughly washed so there’s no foreign matter remaining. The beans are then left to dry on what’s known as a drying bed and turned every few hours so they all dry evenly. The coffee itself is grown on the beautifully lush green hillsides of Sidamo, hence the name, and the washed coffee produced is a result of the precise techniques used. 

Great at any time of day

The Sidamo brings with it a fruity fragrance with some floral notes that are balanced with its body and acidity, you’ll also find that there’s a delicious hint of apricot in the aftertaste. This is a coffee that can be enjoyed alone or as part of a meal. It can be enjoyed simply for its taste or it can be savoured after a delicious meal.
